Bounty with cherries. Cheesecake

Recipe ingredients

200 g of mascarpone cheese
0.5 glass of coconut milk
2 spoonfuls of desiccated coconut
4 spoonfuls of Malibu
1 spoonful of gelatine + 1 spoonful of water
Cherry preserve for the topping

1. Mix all the ingredients together excluding the gelatine. 2. In a separate container mix gelatine with water. Simmer until melted (do not boil). 3. Pour the gelatine into the cheesecake dough. 4. Stir the lot, pour to dishes and put into the fridge for at least 2 hours for the mixture to set. 5. Top with heated marmalade with cherries before serving.
